Purpose and goal
To evaluate optimal parameters for growth of the fungus i laboratory. To test the optimal growth settings in pilot scale. To develop a food product prototyp based on the cultivated optimal fungal mass and to evaluate its future potentials.
Expected results and effects
Within the project, optimal growth factors for the fungus were generated. Cultivation in pilot scale, according to the optimal settings generated in laboratory, generated varied results due to the fact that size difference in real production has large impact on the outcome. From the different trials, one recipe was chosen and repeated. Thereafter it served as basis for the product development step. Evaluation from product development showed potentials as well as need for secondary process.
