Purpose and goal

Bakels Aromatic is executing a market oriented R&D project which will create advanced competitive advantages and long term added value for the global bakery industry. This will in-turn give Bakels Aromatic access to new geographical markets to create future growth. The concrete result of the highly innovative R&D project is a pumpable and robust alpha-gel based on monoglyceride with long shelf-life.

Expected results and effects

The project has through the scientific product development work successfully developed a pumpable and robust alpha-gel based on monoglyceride with long shelf-life. The shelf-life of the newly developed product has increased with 800 % compared to excisting commercial product today. The results have been repeated in pilot-scale and the scale-up to full commercial production has been performed. Commercial tests at customers will start in January 2019.

Planned approach and implementation

The project have through theoretical invention of ingredients, laboratory development, formulation and stability studies successfully developed a newly formulated alfa-gel with long shelf-life and high robustness. The prototype has been exposed to elevated temperatures to mimic the circumstances during export to the southern hemisphere, The developed product has been transfered to full scale production and commecial tests at customers will start during January 2019..
