Innovative processing of fiber-rich side stream for attractive foods

Purpose and goal

The purpose of the project has been to optimize the use of raw materials by using side stream for the development of new attractive vegetable foods. During the project, we have gained greater knowledge about this side stream with regards to its nutritional content and physicochemical properties. Furthermore, suitable treatments for a food-safe product of the side stream has been investigated and several different further processing of this have been tested. The goal of the project was to have developed two product prototypes based on a side stream, which has been achieved.

Expected results and effects

The project has provided a good understanding of suitable processes for processing the sidestream and also for the further processing. By refining the sidestream to food, the oat raw material would be better utilized and Oatly would be able to offer innovative products that make it easier for consumers to switch to a more plant-based diet and sustainable lifestyle.

Planned approach and implementation

The project has followed the plan of working with 6 work packages (AP): AP1: Project management and collaboration AP2: Identification of product prototypes that the fiber residue can be included in AP3: Assessment of the market potential AP4: Investigation of which treatments of the fiber fraction required AP5: Laboratory development and optimization of ingredients for the preparation of product proposals AP6: Design of the production processes for the most promising prototypes.
