Important results from the project

The purpose of the project was to create a business model for how food waste could be used for better purposes - to create an added value from food waste from shops. The Project has demonstrated e working business model but has also shown that it takes a lot of engagement and a bigger market to make the idea feasible.

Expected long term effects

The expected result was to show that the food waste could be used for better purposes, instead of incineration or digestion. We have shown this in the Project by creating a sellable product. We were hoping to show all steps in a business model, including the availability of raw materials. processing to a product, and marketing. We have achieved this, but could not make the project feasible.

Approach and implementation

Initially, we analysed what kind of fruits and vegetables that were available, and what they could be used for. Routines for collecting were established. A graphic profile and the name Fallguld was developed. After six months, we had access to a permanent kitchen, which was good for the production. We have demonstrated the chutney in different fairs, and some shops are selling the chutney. It is actually a bit surprising that all this was done in only a year.
