Important results from the project

The project resulted in two organic plant-based minced products (växtfärs) under the brand name "Smak av SVEA". Through gentle manufacturing the products have good formability and structure and, in comparison with current corresponding products on the market, a good nutritional profile. The climate footprint at the industrial gate is below 0.4 kg CO2e/kg. The project has shown that all-Swedish production and Swedish organic ingredients can result in tasty, sustainable and nutritious products at a competitive price on the market.

Expected long term effects

All objectives in the project have been met and several have been exceeded. The products meet the criteria for approved nutritional claims within high protein content, low fat content, low saturated fat content and high fiber content. Smak av Svea Växtfärs meets all the set criteria to be labeled with the Keyhole symbol. The climate impact of Smak by Svea Växtfärs is low in relation to nutritional content. By using completely natural ingredients, mild process and without industrial additives, the side streams from the manufacture are basically non-existent.

Approach and implementation

The project was carried out in different work packages that focused on sustainable nutrition, product development, sustainable production and process implementation, customers and market and project management. The various work packages have been allowed to work partly in parallel. The area is relatively new and the project had to start with establishing terminology, methods and requirements for important quality aspects. Analysis of the climate impact was carried out by RISE at the end of the project when there was an industrial production with real quantitative data.
