The purpose of our project was to address the need for improved sensory and texture properties in plant-based products by developing a high-quality chickpea protein isolate. Objectives: Research and Literature Review: Our objective was to conduct comprehensive research and literature review on the extraction process of chickpea protein isolate. Optimization of Extraction Process: We aimed to optimize the extraction process to obtain high-quality chickpea protein isolate. Validation with Customers: Our objective was to validate the labscale samples with potential customers.
