Important results from the project

The project has produced spreads (table margarine, cream cheese) based on a combination of fava bean and a new rapeseed oil, that can replace soy and palm oil. The raw material can be produced in Sweden and the crops are well suited for sustainable organic farming. Processes for fava milk have been refined and documented, from lab scale to full scale. Shelf life has been analyzed and suggestions for packaging have been made. Market analysis was performed. The project goals have been fulfilled.

Expected long term effects

The products were well received by an external panel and potential customers. We plan for market release ca one year after the end of the project. These products have a sustainable profile with healthy ingredients, without soy and palm oil, with minimal additives. They will therefore contribute to increased health and sustainability.

Approach and implementation

The project was run by the company as the only beneficiary, with eternal consultants such as RISE and AAK. This provided good control over the project and the results. The work packages included a literature study, process technology and market analysis, covering most needs from lab trials to commercialization.
