Important results from the project
The project intends to understand, with value chain actors, how the value chain can create the conditions for industrial production of bread that considers diversity in the field.
To explore diversified cereals in industrial bread production through an idea generation process, with the ultimate goal of baking bread. All steps in the project have been completed, we have on three occasions: idea generation, prototyping, and tasting the product, in between we have met digitally for check-ins.
Expected long term effects
By highlighting the future need for diversity, we hope to create the necessary understanding of the complexity of future industrial production. Based on the consequences of climate change and eligibility requirements on preparedness, we will need to reorganize our industrial food production; this was a first experiment
Increased interaction between actors in the value chain increases understanding of the common problem. We hope the project and its results will inspire more people to do the same
Approach and implementation
The project was implemented using design thinking methodology. The initial plan was to do a larger part of the project digitally, but as experience with the methodology was limited, we met physically at important points. We also narrowed down the project group and had the same actors with us throughout the project. This built trust and created good cooperation on several levels, between farmers, mill, industrial bakery, etc.
We pushed the schedule to enable experiments around baking bread.
