Important results from the project

The project developed sustainable, shelf-stable meals in glass jars and explored local collaboration through shared resources. With support from French experts, pressure canning skills were built. Exchange, recipe testing, and a prototype contest were completed. The project laid the groundwork for a craft-based, low-impact preservation method with potential to strengthen Sweden’s food system.

Expected long term effects

The project has laid the foundation for a new form of artisanal pressure preservation in Sweden. It creates the conditions for more people to adopt and spread this method, which strengthens local food processing. The technology contributes to sustainable, nutritious meals without additives, reduced food waste and increased access to good food all year-round without the need for refrigeration. In the long term, this can contribute to a more robust, resilient and climate-smart food system.

Approach and implementation

In summary, the project went very well, both practically and in terms of time. The new initiated collaborations have exceeded expectations with many more in-depth ambitions for the future. In line with the project plan, we have now established an autoclave in Roslagen where the work can continue to develop. We have initiated many conversations with new actors that we believe can develop positively. The webinars that were planed for were replaced with physical meetings.
