Purpose and goal
The project aims to explore and develop a Swedish industry standard for safe pressure canning of food. Through collaboration with French experts, authorities, food artisans and producer associations, we want to create guidelines that enable more small-scale artisan canning, strengthen local food processing, contribute to sustainable food systems and increase Sweden´s food security.
Expected effects and result
The project provides new knowledge, creates networks and proposals for a Swedish standard for pressure canning. The result will be better term for sustainable small-scale canning, increased collaboration between authorities and producers and a strengthened circular food supply.
Planned approach and implementation
The project is implemented through a survey of foreign guidelines for safe pressure canning of different types of food, dialogue with authorities, foreign experts and Swedish producers, and the development of proposals for a Swedish industry standard. The goal is to create policy that facilitates safe small-scale canning and strengthens Swedish food security.
