Purpose and goal
The project involves the development of computational and analysis models to predict experienced sweetness through the composition of "sweet" food additives such as sugar, natural and synthetic sweeteners. In particular, this tool will shorten the time and costs of developing new and sugar-reduced products, which today is a limiting factor for new food development for small to medium-sized food companies.
Expected results and effects
The result will be the foundation of a tool for the food industry to predict certain sweetness of different combinations of sweeteners in different matrices. The tool will be an extra digital sense to be used in for the tasting panels in both in quality control and in product development and new formulations.
Planned approach and implementation
We will systematically analyse different sweeteners in a variety of matrices with both human sensory and chemical analyses. Starting with water solutions of various sweeteners to further switch to fruit drinks and later explore other food groups such as pastries and dairy products.
